  • 3 Cup – Water
  • 1 Onion – Chopped finely
  • 8-10 – curry leaves
  • 1 – Bay leaf
  • a small piece of mace
  • 1 tbsp – Jaggery powder (Gud )
  • 1/4 tsp – Asafoetida
  • 1 tbsp – Red chili powder
  • 1 tbsp – Fenugreek Seeds

Cooking Process

  1. Dry fry the peanuts on low to medium heat until fragrant and the skin becomes red. You can roast it with oil or without oil.
  2. Dry toast the sesame seeds and powdered coconut in the same pan over low heat.
  3. When finished, turn it off and leave it to cool.
  4. When the masala mixture has cooled, coarsely crush it and keep it aside. Meanwhile, clean and dry the brinjal.
  5. Make a cross cut on everything, leaving the stem intact.
  6. 1 tbsp oil in a pan, then include the brinjal. Cook over medium heat, rotating occasionally, until they are tender and the skin is loosening somewhat. (Approximately 10 minutes.) You can deep fry brinjal also.
  7. Include the remaining one tbsp oil in the same bowl.
  8. When the oil is hot, add the garam masalas, which include cloves, cinnamon sticks, mace, cardamom, and bay leaf.
  9. Then, include the cumin, mustard, and fenugreek seeds and allow them to splutter.
  10. Add the curry leaves, onion, and asafoetida when they begin to sputter.
  11. When the onion has become translucent, add the garlic and ginger paste.
  12. First, you need to pour 1/4 cup water. Then, include powdered turmeric, chili powder, coriander powder, and chopped green chilies. Now, just cook for 2-3 minutes.
  13. Now add the dry peanut and 2 1/2 cup water.
  14. Allow it to boil on medium heat, stirring occasionally, as it will tend to stick from the bottom.
  15. Once the water begins to boil, include tamarind juice, jaggery powder, and salt to taste.
  16. Allow it to a boil, then add the brinjals after the oil oozes out (10 minutes).
  17. Adjust the gravy’s consistency to your liking.
  18. Allow the gravy to simmer for around 10-15 minutes.
