1. Classic Eggless Mayonnaise with Milk
Ingredients:
- Olive oil: ½-cup
- Milk: ¼-cup (chilled)
- Vinegar: 1 teaspoon (you can use apple cider vinegar if you want)
- Salt and pepper: as per taste
- Mustard paste: 1-teaspoon
- Turmeric: a pinch (optional, for colour)
Process:
- In a mixing, a jar takes all the ingredients without oil.
- Blend it well and add the oil gradually.
- When all the mixture is blended well, you’ll get perfectly thick and creamy classic eggless mayonnaise. It can be kept in an airtight jar in the refrigerator.

2. Tandoori Mayonnaise
Ingredients:
- Milk: ½-cup (chilled)
- Olive oil: ¾-cup
- Mustard Powder: ½-teaspoons
- Sugar: ½-teaspoons

- Chili Sauce: 3-tablespoons
- Chili Powder: 1-teaspoon

Process:
- Combine salt, sugar, mustard powder, freshly ground pepper, and milk from the fridge using a grinder. Just give it a quick pulsing.
- Now add half of the oil and blend well.
- When the sauce begins to thicken, add the remaining oil and vinegar.
- Blend thoroughly until a smooth cream forms.
- Stir in some chili sauce, chili powder, turmeric, coriander, cumin, garam masala, Kasuri methi, and ginger garlic paste to the mayonnaise.

3. Soya Milk Mayonnaise
Ingredients:
- Soya Milk: 1-cups (chilled)
- Oil: ½-ltr (chilled)
- Vinegar: ¼-cup
- Mustard Sauce: 1 tablespoon
- Garlic: 2-cloves
- Salt and pepper: as per taste
Process:
- Add soya milk, garlic cloves, vinegar, mustard sauce, salt, and freshly ground pepper in a large mixer jar.
- Grind everything very smoothly.
- Keep grinding and add oil gradually.
- When you see oils incorporated adequately with the soya milk and become creamier, stop blending.
- Give the mixture half an hour’s rest and pour it into an airtight container to store that in the fridge.
4. 1 Minute Vegan Mayonnaise
Ingredients:
- Cashew Nuts: 25-30 (soaked for 10 minutes)
- Garlic: 2 to 3 cloves
- Lemon Juice: ½-lemon
- Salt and pepper: as per taste
- Apple Cider Vinegar: 1-tablespoon
- Mustard Paste: ½-teaspoon
- Water: ¼-cup
Process:
- Put all the nuts and garlic cloves in a mixer grinder jar. Coarsely ground it for a few seconds.
- Now mix lemon juice, vinegar, and mustard paste properly.
- After everything is combined, season it with salt and pepper. Later, stir in a quarter cup of water, and you’ll have a nutritious vegan mayonnaise that’s made without eggs or oil.
5. Mixed Herbs Mayonnaise
Ingredients:
- Milk: ½-cup (chilled)
- Olive oil: ¾-cup
- Mustard Paste: ½-teaspoons
- Sugar: ½-teaspoons
- Vinegar: 1-tablespoon
- Green Chili: 1
- Fresh Coriander: 3-tablespoons
- Mint Leaves: 3-tablespoons
- Ginger: 1-inch
- Garlic: 2-cloves
- Salt and pepper: as per taste
Process:
- First, add mint, coriander, chilli, ginger, and garlic in a grinder jar.
- Grind it coarsely for a few seconds and mix in three tablespoons of water. Get a smooth paste going.
- Once the paste is ready, place it in a small bowl.
- The jar adds chilled milk, mustard powder, salt, freshly ground pepper, and sugar in that same grinder. Pulse a couple of times.
- Now add half of the oil and mix well.
- When the sauce begins to thicken, add the remaining oil and vinegar.
- Mix until it gets proper in a creamy texture.
- Now add the green paste that we made before.
- Mix it well, and this mixed herb mayonnaise is ready to serve.
- You can store this mayo in the refrigerator for a few days.
