Peppercorn Beef Tenderloin With Horseradish Cream sauce

Peppercorn beef tenderloin is one of the most delicious, spicy Christmas food items. 

Ingredients

For Peppercorn Beef Tenderloin

  • Green Peppercorns: 1-tablespoon
  • Sprigs Rosemary: 3
  • Beef Tenderloin: 1 to 4-lb (tied and trimmed with butcher’s twine)
  • Honey: 2-teaspoon
  • Pink Peppercorns: 2-tablespoon
  • Kosher Salt: as per taste 
  • Black Peppercorns: 1-tablespoon

For Horseradish Cream Sauce

  • Heavy Cream: 1 cup
  • Unsalted Butter: 1 ½-tablespoon
  • Fresh Horseradish: 1 Oz or (1/4 cup) (finely grated and peeled) 
  • Leek: (sliced into half-moons, whites only)
  • Kosher Salt: as per taste 
  • Vermouth: ¼-cup (dry)

Instructions

For Peppercorn Beef Tenderloin

  • Preheat oven to 425°F and take a medium-size bowl. Then add crushed peppercorns, chopped rosemary, honey, and 1- teaspoon salt and mix them very well.
  • Then pat tenderloin dry with paper towels and rub this spice mixture on a rimmed baking sheet. Keep 135°F for roast and wait for 35-45 minutes. After that, transfer to a cutting board, slice tenderloin after 10 minutes, and then serve with Horseradish Cream Sauce.

For Horseradish Cream Sauce

  • Firstly, melt butter over medium heat in a frying pan. Then add leek and cook until tender but do not let them brown. Again, add vermouth and cook for about 4 minutes till not it becomes syrupy. After that, stir in cream and cook till then reduced by half. 
  • Lastly, turn off the heat. Stir in horseradish continuously. Then add some salt for taste and serve.

Chicken, Sausage and White Bean Stew

This recipe is delicious and mouth-watering. It has a rich flavor.

Ingredients

  • Low-sodium Chicken Broth: 2-cups
  • Olive Oil: 1-tablespoon
  • Carrots: 2-medium (chopped)
  • Garlic: 2-cloves (pressed)
  • Chicken Thighs: 8-(2 1/4 pounds)
  • Onion: 1-medium (chopped)
  • Cannellini Beans: 2- 15-ounce cans (rinsed)
  • Pepper and Kosher Salt: as per taste
  • Fresh Breadcrumbs: 2-cups (about 5 ounces)
  • Sweet Italian Sausage: 1 lb. (about 5- links)
  • Fresh Thyme Leaves: 2-tablespoons
  • Bacon: 1/2 lb. (cut into 1/2-inch pieces)
  • Stalk Celery: 1 (chopped)

Instructions

  • Preheat oven to 350°F and heat oil over medium heat in a larger frying pan. Then dry pat chicken and season with pepper and salt (1/4 teaspoon each). After that, put the skin side down in a frying pan and cook for about 6 minutes until golden brown. Again, turn and cook for a few minutes and shift to a plate. 
  • Then add sausages to a frying pan and cook about 6-8 minutes until browned all over. After that, move to a cutting board, and before slicing, let rest for a few minutes.
  • Again, add bacon and cook for 8-10 minutes until golden brown. Then move to paper towels with a slotted spoon. 
  • After that, add salt (1/4 teaspoon) and onion to a frying pan and cook for about 5-6 minutes until tender and golden brown. Again, add celery and carrots and cook for 3 minutes. Turn the heat off.
  • Mix breadcrumbs, thyme, and garlic in a small bowl and set aside. Stir broth and beans into a frying pan with bacon, sausage, and chicken and drizzle with crumb mixture.
  • Bake for about 1/2 hour until stew has thickened, and chicken is fork-tender. Heat broil and broiler for about 3 minutes until crumbs are golden brown and let stand for few minutes before serving.

  • Shrimp: 1-lb. (shelled, deveined)
  • Butter: 4-tablespoons (melted)
  • Sesame Seeds: as needed
  • Panko (Japanese Bread Crumbs): ¾-cup (divided)
  • Jalapeno Chili: 1 (sliced and seeded)
  • Sugar: ¼-teaspoon
  • Packed Fresh Cilantro Leaves: ¼-cup plus more for garnish

Instructions

  • Firstly, Place 6 inches oven rack from the broiler heat source and set up baguette slices on a large foil-lined cookie sheet in each layer. Then, broil until the tops are golden, about 1-2 minutes. After that, turn the sliced baguette over and brush some melted butter. The remaining baguette slices and butter are set aside.
  • Then pulse ginger, cilantro, panko (1/4 teaspoon), jalapeno, sugar, salt (1/4 teaspoon), shallot in a food processor until finely chopped. Again, add mayonnaise and shrimp and pulse until shrimp is chopped, scraping and stopping the side of the bowl, and separate this mixture among the baguette slices.
  • After that, combine reserved melted butter and remaining panko (1/2 cup) very well in a small bowl. Top single toast with panko mixture and press them to adhere. Then broil until shrimp are cooked and browned, about few minutes. Finally, serve topped with cilantro leaves and sesame seeds.

4. Wild Mushroom and Beef Stroganoff

Ingredients

For Polenta

  • Coarse Cornmeal or Polenta: 2-cups (not instant)
  • Kosher Salt: As per taste 

For Stroganoff

  • Mixed Mushrooms (Such as Shiitake, Cremini, Oyster, Maitake): 10-oz. or about 4 cups (sliced) 
  • Garlic: 2-cloves (chopped) 
  • Olive Oil: 4-tablespoons
  • Packed Baby Spinach Leaves: 2-cups
  • Onions: 2 (thinly sliced)
  • Low-sodium Beef Broth: 1 cup
  • Kosher Salt: as per taste 
  • Fresh Thyme: 4-sprigs
  • Shallot: 1-large (thinly sliced)
  • Pepper: as per taste 
  • Sirloin Steak: 12 oz. (thinly sliced)
  • Brandy: ¼-cup
  • Chopped Parsley, Grated Sour Cream, and Lemon Zest, for Serving

Instructions

  • First, make polenta,heat 1/2 cup water in a medium saucepan on medium heat and add 1- teaspoon salt and boil. Then whisk in cornmeal and keep in a medium-low and cook. I frequently stir to prevent burning and eliminate lumps, about 15 minutes until polenta is cooked and thickened.
  • To prepare stroganoff, first of all, heat 2- tablespoons of oil on medium-high heat in a large frying pan. Then add mushrooms and cook for 4-6 minutes until tender and golden brown. Then move to a bowl. 
  • Reduce heat to medium and add shallot, onions, and oil (1 tablespoon). Season with pepper and salt (1/4 teaspoon each) and cook for about 6-8 minutes until it’s tender. Again, stir in garlic and thyme and cook for a minute. Then move with mushrooms to a bowl.
  • Again, heat the remaining tablespoon of oil in medium-high heat. Season sirloin with pepper and salt (1/2 teaspoon each) and cook about 1-2 minutes per side until browned. Turn off the heat and move to a bowl with mushrooms and onions.
  • Then add brandy to a frying pan and cook, scraping brown bits, and simmer for a few minutes. Again, add broth and simmer. Then return vegetables and beef to a frying pan and toss with spinach for few minutes until just starting to wilt. Season with salt and pepper if desired, and discard the thyme.
  • To loosen, add broth into polenta or water (1/4 cup), adding more if needed. Then move to a plate and top with vegetable and beef mixture. Finally, serve with sour cream, lemon zest, and parsley if desired.

Ingredients

  • Olive Oil: 1-tablespoon
  • Fresh Ginger: 2-tablespoons (grated)
  • Radicchio: 1-small head (torn into large pieces)
  • Fennel: 2-bulbs (sliced and cored into 1/4-inch pieces)
  • Fennel Seeds: 2 teaspoons (coarsely crushed)
  • Kosher Salt: as per taste 
  • Sherry Vinegar: 1-tablespoon
  • Pepper: as per taste 
  • Mixed Mushrooms: 1 lb. (cut if large)
  • Honey: 2 tablespoons
  • Chicken: 1 4- to 5-lb (giblets discarded)
  • Navel Orange: 1
  • Chopped Flat-leaf Parsley for Serving

Instructions 

  • Firstly, set the oven to 350°F and ready a baking sheet with parchment paper by line rimmed. Then toss fennel with pepper and salt (1/2 teaspoon each) and transfer to the outer edges of a frying pan.
  • Then take a great zest of orange and squeeze in 3 tablespoon juice into a small bowl and beat in honey to dissolve. After that, stir in fennel seeds and ginger.
  • Dry chicken pat and put in the middle of a prepared baking sheet. Then stuff this with orange halves and brush them with half of the mixture juice. After that, roast for 40 minutes.
  • Then, raise oven temperature to 425 degrees Fahrenheit, toss mushrooms with fennel, and use the remaining mixture juice to brush this chicken. Roast for about 25-30 minutes until the temperature rises to 165 degrees Fahrenheit. After that, move to a cutting board and carve chicken after 10 minutes. 
  • Toss fennel and mushrooms with vinegar and season with pepper and salt and fold in radicchio and serve.

  • Then heat oil in a large deep frying pan (about 10-12 inches from the top) over medium-low heat (350 degrees Fahrenheit) 
  • After that, place the turkey carefully into hot oil and fry for about 35-45 minutes and keep the oil temp about 300-325°F. Then remove the turkey from hot oil and transfer it to a cutting board and slice turkey after 25 minutes.

For the Bourbon-Molasses Glaze

  • Butter: 4-tablespoons (cut-up and unsalted)
  • Molasses: ¾-cup
  • Black Pepper and Kosher Salt: as per taste 
  • Apple Cider Vinegar: ¼-cup
  • Bourbon: ¼-cup
  • Rosemary Sprig: 1

Instructions

  • For making the pork chops bring garlic, cinnamon, brown sugar, 6 cups water, orange juice, thyme, peppercorns, bay leaves, and salt to boil in a large pan. Then turn the heat off and allow them to cool at room temp. Again, add pork and brine for 12 hours.
  • Then rinse under cold water after removing pork from brine and dry pat pork with paper towels.
  • Preheat oven to 350 degrees Fahrenheit and heat oil over medium-high heat in a large frying pan. Cook pork in batches and turning once for about 4-6 minutes until golden brown. Then move to an edged baking sheet and bake about 4-6 minutes until the temp reaches 149 degrees Fahrenheit. Allow them to cool for 5 minutes and serve sprinkled with Bourbon Molasses Glaze.
  • Now it’s time to make the glaze, so combine rosemary, apple cider vinegar, and molasses very well in a small pan and cook over medium heat for about 12-15 minutes until reduced to 2/3 cup.
  • Then whisk in bourbon and unsalted butter and cook for few minutes until it gets in perfect consistency. 
  • Finally, Season with black pepper and kosher salt as per taste.

  • Basil: ¼-cup (freshly chopped)

For Thyme Toasted Bread

  • Olive Oil: ¼-cup
  • Sea Salt: ½-teaspoon
  • Long French Baguette Long Ciabatta Bread: 1-loaf
  • Thyme: 1-tablespoon (freshly chopped)

Instructions

  • Firstly, preheat the oven to 400°F and add olive oil and tomatoes to a large frying pan. Season with pepper and salt and bake until tomatoes beginning to char slightly for about 30 minutes. 
  • Then add the tomatoes and vegetable broth (1 cup) to a blender and blend until the tomatoes become smooth.
  • In a heavy soup pot or Dutch oven, melt the butter and heat the olive oil over medium heat. Then add the garlic cloves and chopped onion and simmer for 5 minutes, or until the onion is transparent and tender.
  • Then add thyme and fresh chopped basil and stir. Then drizzle the flour over the onions and continuously stir. Again, add vegetable broth (1 cup) and whisk to prevent lumps.
  • After that, stirring the blended tomatoes and add smoked paprika and brown sugar, and season with pepper and salt. 
  • Last of all, simmer for 20-30 minutes and then serve with toasted bread or grated parmesan cheese.
  • First, make thyme toasted bread, brush the thinly sliced bread with olive oil, drizzle with fresh thyme, and then season with salt.
  • For broiling the bread, put the bread on a baking sheet and broiler for 2 minutes. Again, turn the bread and broil for a minute.

  • Egg Whites: 6-large (at room temperature)
  • Crushed Candy Canes: 3 (about 1/4 cup)
  • Butter: 1-cup (at room temperature and unsalted)
  • Granulated Sugar: ½-cup
  • Baking Powder: ½-teaspoon
  • Pure Vanilla Extract: 2-teaspoon
  • Cake Flour: ½-cup (leveled and spooned)
  • Baking Soda: ¾-teaspoon
  • Buttermilk: ½-cup (at room temperature)
  • Kosher Salt: ½-teaspoon
  • Cooking Spray
  • Roughly Chopped Store-bought Peppermint Bark for Decorating

For Frosting

  • Tartar Cream: ¼-teaspoon
  • Egg Whites: 4-large
  • Corn Syrup: 1-tablespoon
  • Kosher Salt: ¼-teaspoon
  • Sugar: 1-cup (granulated)
  • Water: 3-tablespoons

Instructions

  • Set the oven to 325°F and lightly grease three 8-inch round cake pans. Line with greased parchment. Baking soda, flour, salt, and baking powder beat together in a bowl.
  • Then, on medium-high speed, beat sugar and butter with an electric hand mixer until frothy and pale, about 3-4 minutes. Again, add egg whites and beat until mixed very well, one at a time. Then whisk in vanilla and reduce the mixer speed to low and beat in buttermilk and flour mixture, alternately, starting and finishing with flour mixture until mixed well. After that, I divided this butter among prepared cake pans.
  • After that, bake for about 25-30 minutes until a small wooden stick inserted in the center rises clean. Then let cool in pans for 5 minutes on wire racks, invert this pan onto racks, and cool completely. 
  • Finally, put one cake layer on a plate or cake stand and decorate with frosting (1 cup) and drizzle with crushed candy canes (half) and repeat. Then cover each side of the cake and top with the rest of the frosting, and serve.
  • To make frostingbring 2 inches of water in a large pan to a gentle simmer. Place tartar cream, corn syrup, egg whites, water, sugar, and salt in a bowl.
  • Then place this bowl over a pan and cook and beating with a hand mixer on a low speed, about 8-9 minutes, until mixture register 160 degrees Fahrenheit on a candy thermometer. 
  • After that, transfer this bowl from the pan and beat continuously on a medium speed for about 2-3 minutes until thick and glossy peaks form.

Then add rice and toss to coat, and again add the half cup of water and cider—season with pepper and salt and boil. Then reduce heat to low and cover. Cook until the rice is cooked, about 15-17 minutes. Before remaining the last 10-minutes of cooking, add cranberries. 
  • Then, heat 2- tablespoon oil over medium heat in a large frying pan and add onions, and season with pepper and salt. Cook for about 18-20 minutes until onions are starting to brown and tender. Again, add chopped garlic and cook for about 1-2 minutes until fragrant. After that, stir in parsley and vinegar.
  • Finally, add onion and scallions mixture to the rice and toss to mix and serve.
